Ashford sends us further off the main roads than any other part of Kent. The venues that book us here are mostly rural: converted oast houses, working farms that let their barns for weddings in summer, and marquees pitched in fields with a track for access. Planning one of these days is really a logistics exercise. We ask three questions early on, which are how close a long wheelbase van can park to the bar position, whether the power supply is a domestic socket or a generator, and whether the ground stays firm if it rains the night before.

Being on a farm changes the drinks too. Ashford is surrounded by orchards, vineyards and hop gardens, and the produce is genuinely better than what a wholesaler delivers, so our menus here lean on local apples, pears, cobnuts and soft fruit in season. A late September wedding might get a pressed apple and thyme serve made from fruit grown a few miles away; a June event is more likely to get strawberry, elderflower and lemon verbena. We tell guests what is in the glass and where it came from, which is a small thing that consistently gets remarked on.

Timings in rural venues are usually looser than in hotels, but the end of the night is stricter. Many Ashford barns have a hard music curfew of 11pm or midnight and expect the site to be clear the same night. We build the schedule backwards from that, close the bar fifteen minutes before the curfew, and pack down while the last songs are playing so nobody is left waiting for a taxi in the dark.
